Caramel PopCorn

Great Grandma Gingerich's Caramel Corn


Single Batch:                                    Double Batch:



16 Cups Popped Corn                      32 Cups Popped Corn
(1 Gallon Ice Cream Bucket full)      (2 Gallon Buckets Full)


In a large sauce pan heat:


Single Batch:                                  Double Batch:
1 Cup Brown Sugar                         2 Cups Brown Sugar
1/2 Cup Butter                                1 Cup Butter
1/4 Cup Corn syrup                         1/2 Cup Corn Syrup
1/2 tsp Salt                                    1 tsp Salt


Bring to a boil for 5 minutes, stirring.
Remove from heat and add:


Single Batch:                                   Double Batch:
1/2 tsp Baking Soda                         1 tsp Baking Soda
1 tsp Vanilla                                    2 tsp Vanilla


Pour over popcorn and stir well.  
Bake at 200 degrees for 1 hour, stirring every 15 minutes.
